Manger vivantA diet of raw (living or sun) foods is vegan in nature, but the food has not been exposed to a temperature above 105ºF/40ºc .

The advantage of a raw diet is that the nutritional properties and enzymes in food are not destroyed through cooking. Qualities of food remain as they are in nature and as we have evolved to consume them. For example, vitamin C is altered during thermal treatments such as pateurization. Cooking in addition may reduce the potential of foods to combat cancer.

However, certain specialists are not in agreement with a full raw diet as certain foods are made more digestable through cooking(1). Besides, others argue that the bio-availability of certain fruits and vegetables is improved through cooking(2). Other specialist recommend that it is optimium for raw food to cohabit with cooked ingredients in an ideal diet.

In order to adopt a raw diet, it is necessary to source certain tools such as a dehydrator or a mandolin.

As Matt Amsden, a gourmet raw chef states, eating raw is more than a diet, it's a way of life. Adapt your way of life to eat as much raw food as possible and your body will change for the better. Your quality of life will be improved, you'll have more stamina, more energy, you'll need less sleep and you'll feed physically stronger. You will become another person!
